The main difference between vegan cupcakes and regular cupcakes is that vegan cupcakes don't have any dairy or eggs in them. These ingredients are replaced with oat milk, coconut milk, and/or canola oil. Using these ingredients means that the cupcakes are still moist, fluffy and full of flavour.
We use a vegan ermine frosting on all of our vegan cupcakes. It's a funny name, but it's better than “boiled milk frosting”! This traditional recipe is silky smooth and less sweet than traditional vegan icing. It's made from coconut milk, brown sugar, margarine and a hint of flour.
No, we currently don't have any cupcakes that are both vegan and gluten-free. (Our vegan icing actually has a hint of flour in it!) All of the products at Bunner's are both vegan and gluten-free. Tori's Bakeshop and Bloomer's are a vegan bakeries that also have gluten-free options.
